Amaretto cake

Ingredients for about 4 people: 

For the shortcrust pastry:

  • 250 gr. 0 flour
  • 130 gr. of butter
  • 120 gr. of sugar
  • 10 gr. of olive oil
  • 2 egg whites + 1 egg yolk
  • the grated peel of half a lemon
  • the peel of half an orange 
  • half a sachet of baking powder
  • a pinch of salt

For the filling:

  • 3 egg whites
  • 200 gr. amaretti cookies
  • 250 cl. of egg Marsala


Mix all the dough ingredients well except for the flour, which should be added last while working the dough quickly so that it does not overheat.
Soak the macaroons in Marsala wine until all the liquid has been absorbed, crumble them with your hands, then add the eggs and mix well.
Stuff the short pastry, previously flattened and laid inside a cake pan, with the filling.
Garnish the surface with scraps of the pastry and whole almonds.
Place in oven at 160°C for the duration of about 40 minutes.
Dust with a little powdered sugar.
